Pumpkin Chocolate Chip Pancakes

Did you think that just because the Blogger Recipe Challenge theme this month has changed to Holiday Recipes you would escape my quest?




Today, Josh pumpkined the chocolate chip pancakes! Yes, Josh cooked breakfast today, and it was super yummy!

Josh found a recipe, but has changed it so much, I’m just going to give you his version!

    • 2/3 cup milk
    • 2/3 cup pumpkin puree
    • 1 egg
    • 1 tablespoons sugar
    • 1 tablespoon canola oil
    • 1 teaspoon vanilla extract
    • 1 teaspoon pumpkin spice
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 cup self-rising all-purpose flour
    • 1/3 cup mini-chocolate chips

Combine the wet ingredients in one bowl and the dry in another (except the chocolate chips).

Add the chips to the wet, then combine the wet and dry, by folding. Cook on a griddle and serve with butter and syrup if desired.
